Do you still need a start/finish witness for ride docs or can it be done with a photo of the receipt/speedo reading?

When i did the full monty in July I didn't have witnesses just a photo of the receipt alongside the odometer reading

You might check. I know that when I became a premium member the IBA did away with my requirement for witnesses.

The IBA may have expanded this to all riders. But you should check before you get home then discover you needed a witness.

The IBA UK documentation requirements seem to be slightly different from the US requirements
